Gujarati Kadhi - Sweet & Tangy Indian Gravy Recipe by Ruchi Bharani - Vegetarian [HD]
INGREDIENTS
1/2 cup curd
2 tablespoons gram flour (besan)
coriander leaves
1 tablespoon clarified butter (ghee)
1 green chilli split into half
curry leaves
lime wedge
clove and cinnamon pieces
salt
1 & 1/2 - 2 tablespoons sugar
1 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1/4 teaspoon fenugreek seeds (methi daana)
METHOD-
- Blend well 1/2 cup curd, 1 cup water and 1 and 1/2 to 2 tbsp. gram flour (besan) together in a vessel with a hand blender. Make it into a nice concoction.
- For tadka, heat 1 tbsp. clarified butter (ghee) in a round bottom pan. Add mustard seeds, cumin seeds, fenugreek seeds, cinnamon and cloves to the hot ghee. Let fenugreek seeds turn brown. Add green chilli and curry leaves once fenugreek seeds turn brown. Stir it well and add the curd mixture. Stir it well and let it boil.
- Add sugar as per taste, salt as per taste. Sprinkle coriander leaves. Let the kadhi simmer for 8-10 minutes. Add water if required.
- Add few drops of lime juice just before taking the pan off the gas.
- Kadhi is ready to serve. Sprinkle some coriander leaves for garnishing.
